Twice baked potatoes
Wrap clean potato in plastic wrap and put in microwave for 4-6 minutes. After potato is cool enough to handle, cut in half and scrape out innards.
Mix:
One laughing cow wedge (I used garlic and herb flavor)
Tablespoon butter
Three Tbs sour cream
Two Tbs grated “unexpected cheddar” (any cheese works)
Salt & P
Mix the above with potato innards, put back in potato “shells”, top with parm, bake for 20ish minutes at 400 degrees.

Isn’t it funny how a color (nail polish) you LOOOOOOVE on your toes, you can DESPISE on your fingers?
Also? Is the disco nail still a thing? Are we still doing that?
After eating like craaaaaaaaaaap and living the slug life for entirely too many weeks, somehow my pants are getting muay uncomf. (Weird, eh?)
So, starting tomorrow…back to eating healthy (and clean as possible (Tosca style)) and running 5x a week.

I haven’t had an infusion since December due to BCBS being a little bitch. Instead, I’ve been on high doses of Prednisone. (How FUN!!)
I hope:
1. My body hasn’t built up an immunity to it.
2. It helps with the extreme fatigue I’ve been having.
3. My insurance company doesn’t change it’s mind. $7000/treatment is A LOT out of pocket.
